Temperature? Engine vs oil.

Hi all, it's 86 degrees and humid here in New England today. Just back from a ride around town. After stopping for the day, checked engine temp on my VH FP3 ---- reading 301. However, my digital oil stick showed 231.
Is that difference normal? Just curious.

I run around 250-260 down the freeway... can hit 310 in stop and go traffic... sounds normal to me

I guess what I'm asking is: Why a difference between engine temp and oil temp?

The oil is cooled by the oil cooler and when it passes through the oil pan which is attached to the transmission housing.
